As the Chef de Partie, you must be able to provide a constant high standard of food quality, preparation and production. This position is also responsible of assisting the senior chefs in the day to day running of the kitchen while assisting the Junior Chefs in their professional development. Come in live in the idyllic country town of Denmark WA.
Roles and responsibilities
- All stock are kept under optimum conditions
- All mise-en-place is always freshly prepared and on time
- All dishes are being prepared to the correct recipe and to the correct quantity
- All dishes reach the hot plate or passe correctly garnished, the correct portion and size,
- presented on the correct serving dish in the prescribed manner
- Ensure section is kept clean and tidy at all times
- Ensure you have high standards of food hygiene and follow the rules of Health and safety
- Junior chefs and trainees receive the right training and optimum guidance
- Any anticipated shortages are communicated promptly to the Head or Sous Chef
- Lead by example and treat staff fairly and with respect
- Deputise in the Sous Chef absence and take charge of the kitchen when directed to do so
- Attend training courses and seminars as and when required
- Previous experience
- Adequate culinary experience to be successful in the role
- Great cooking skills
- Experience in a high volume restaurant
- Competency in all areas of the kitchen
- A proven ability to work effectively in a team
- Food and wine knowledge and creativity
- Good communication and computer skills
- A cool head
- An ability to delegate appropriately
- Organizational flair
- A grasp of profit margin
Education: Certificate III in commercial cookery
